If you have had this at the restaurants, you will notice that the taste and texture is very different.
The rice used here is risotto rice which explains why it is soft and mushy, for authentic paella it should be Bomba rice.
I found it very bland yet salty so overall it was palatable but not authentic because you should get the prawn flavours coming through as well as the smoky chorizo.
