I don't know why I got these chicken livers but I am so glad I got them because they were so damn good.
The label suggests season and stir fry which then jogged some memories of this Sichuan style chilli and chicken offal dish.
The best thing is that it was pure livers in this pack so I did just that, stir fried it with some red and green chilli and celery and the taste was amazing.
The dish ended up looking like Flipino dinguan which is pork in blood but the haemoglobin in this dish was simply delicious.
The trick is not too overcook the liver so that it is still soft and velvety.
