antonius caviar from Poland does some fine caviar which I got to try at the Specialty fair.
There was the Siberian and the Oscietra.
The Siberian had a short lingering taste in the mouth and was like a salty burst while the Oscietra was much creamier with a lingering aftertaste.
Overall, I liked the Oscietra but the Siberian would come in handy when you have some bland canapes that need a salty kick.
Ideally, caviar should be served on a mother of pearl spoon which does not transfer any flavours but due to health and safety they used plastic spoons which does not affect the caviar as much as metal.
